Veal's liver with orange

The liver is, unless we use dietary supplements, that is not recommanded, absolutely essential to getting the recommended intake of vitamins and it also provides iron in quantity.
Combining iron with oranges providing vitamin C produces a complete meal, and iron is better absorbed.
We can use ordinary bread, pain de mie or brioche.

Ingredients

  • Veal Liver: 100g
  • Orange: 100g
  • Bread: 30g
  • Shallot: 2g
  • Butter: 10g
  • Sugar: 5g
  • Oil: 2g
  • Vinegar: 2g
  • Salt:

Preparation

    Orange


    Make two part of each orange.
    The first cut into cubes.
    Extract the juice from the second.
    Chop the shallots.
    Brown them in butter in a frying pan.
    Add the orange, salt.
    Cook 5 minutes.

    Liver


    Cook in a frying pan with oil, for 2 minutes per side.

    Bread


    Toast bread in toaster.

    Caramel


    Add vinegar to orange.
    Add sugar.
    Caramelize.

Serve


    Put the liver on a slice of bread.
    Pour the marinade of orange and caramel.
    Cover with a second slice of bread.
