Stuffed eggplant

Purely vegetarian recipe. Even if the original recipe includes mozzarella as an ingredient, should be avoided because of health concerns about this product to use original mozzarella. It should be replaced by gruyere instead.

Ingredients

  • Eggplant: 100g
  • Onion: 50g
  • Tomato: 50g
  • Gruyere: 20g
  • Olive oil: 1g
  • Basil:
  • Salt:

Ustensiles

    Oven.

Preparation


    Cut onion into quarters.
    Cut the tomatoes into cubes.
    Cut eggplant into two cups.
    Extract the core and cut it into cubes.
    Fry it in oil with onion.
    Mix with tomatoes and basil.
    Cook eggplant empty anointed with oil, bake 10 minutes.
    Then fill them with the mixture.

Serve


    Warm.
