Omelette Basquaise


Between the piperade and a omelet, a fairly complete vegetarian dish.

Comes from the basque southwest French province. Do use olive oil if possible.

Ingredients

  • Egg: 100g
  • Bell pepper: 60g
  • Onion: 60g
  • Milk: 5g
  • Gruyere : 5g
  • oil: 1g
  • Sugar: 5g
  • Salt:

Ustensiles

    Frying pan.

Preparation

    Vegatable


    Cut the bell pepper into squares and onion into slices.
    Heat one third of the olive oil.
    Saute green pepper and onion.
    Sprinkle with sugar.
    Cover and simmer 15 minutes.

    Omelette


    Grate the cheese.
    Scramble the egg.
    Add milk and cheese.
    Add salt and pepper.
    Heat remaining oil in a frying pan.
    Mix egg and vegetables.
    Cook 5 mn.
    Preheat oven to 100 degrees.
    Keep the omelet before serving.

Serve


    Warm.
