One gave this dish the name of the man who popularized the potato in France, Antoine-Augustin Parmentier. To do this he must overcome prejudice, he organizes tastings where he invited important figures such as Lavoisier and Benjamin Franklin.
He convinced the King of France of its usefulness (in France it was regarded as food for cattle) which leads to its widespread adoption.
This classic dish uses inexpensive ingredients, potatoes and boiled beef and others that are commonly already in the pantry. It is long enough to prepare but easy to succeed.

  • Beef: 50g
  • Potato: 80g
  • Onion: 25g
  • Garlic: 2g
  • Milk: 30g
  • Egg: 20g
  • Butter: 20g
  • Gruyere: 10g
  • Parsley: 1g
  • Oil: 1g
  • Nutmeg: 1g
  • Salt:

    Oven.
    Frying pan.

Preparation


    Preheat oven to 220 degrees.
    Chop the meat (or use chopped steak).
    Cook in a frying pan with oil for 10 minutes.
    Mix meat and parsley and egg.
    Cook the potatoes in water for 30 minutes then mash into a puree.
    Add milk.
    Chop the onion and garlic. Fry them lightly in butter in a frying pan.
    Add onion and garlic puree, add the remaining butter in pieces, and nutmeg.
    Add salt and pepper.
    In bowl, alternate layers of mashed potatoes and meat.
    Grate cheese and sprinkle over the dish.
    Brown in the oven for 25 minutes.

Serve


    Warm.
