Rice, a rich food

For a large population, rice is the food staple, and almost alone, when it is complete.
In fact, it is rich in B vitamins, but it must be supplemented with fruits and vegetables to other vitamins.

It is cultivated for 10,000 years, but because it requires lots of water is replaced in part of the world by wheat, whose intake is fairly close.

Rice and vitamins

In rice, there is of Vitamin B1 needed by the nervous system, B5, B6 also useful for metabolism.
These vitamins may be lacking in the case where we follow some slimness diet.

It is best to eat organic brown rice. Brown rice is actually richer than white rice, but also contains pesticipes and supermarkets tend to sell it semi-complete, where the outer bark has been removed.

Different species

They do not all the same nutritional qualities. There are basically tow main species, the round grains japonica and long grains indica.

  • Balsam. Long grain rice from Pakistan and India. Indhi basmati means "queen of fragrance". Its taste is pronounced.
  • Golden rice. Indica variety genetically modified for improved food intake.
  • Wild rice. Long brown rice, containing more amino acids and proteins.

White rice and brown rice are not species. White rice is brown rice which the bark was removed, and with it most of the nutrients.

Cooking

Italian risotto is to cook the rice by adding water little by little. You can start cooking in olive oil with onion, is the tostatura. Then you continue with white wine before going to water or broth.

The rice pilaf is first cooked in oil, until it become translucent, but not toasted, then water water is and you continue the cooking covered, until it is completely evaporated and absorbed.

You can still cook it like pasta by pouring it in boiling water, but it is preferable that the cooking is finished without having an excess of water to drop, as it contains nutrients ...
